Now this has to be one of the coolest, most interesting articles that I’ve been lucky enough to research and write in my time freelancing.
One of Colorado’s claims to fame is, of course, its exciting and unique food scenes in Boulder, Denver, and beyond. As far as signature dishes go, there is nothing that screams open prairie kind of like bison does and, here in the state, we have some chefs doing innovative and sustainability-driven things with bison meat that will give you a major case of the drools.
